I thought that maybe my favorite holiday would lose a bit of its luster after deciding to switch to a vegan meal plan, but oh how wrong I was. I love Thanksgiving now more than ever. You know why? I really get a kick out of experimenting with new recipes and putting a seasonal twist on my old favorites.
