This is a simple dip that’s tasty enough to take to a party and easy enough to pack in a lunch with some pita chips and carrots.Print
- 2 cups spinach, tightly packed
- 1 can (15 ounces) white beans
- 2 tablespoons olive oil
- 1/2 clove garlic, medium
- Combine all ingredients in a food processor. Add water, a few tablespoons at a time, while processor is running to adjust to desired consistency. Add salt and pepper to taste.
- Refrigerate for 30 minutes and then bring to room temperature before serving. Serve with Pita chips, tortilla chips or your favorite vegetables for dipping.
