If you would have told me in 1986 that I would be eating chia seeds decades later I would have asked you to remove your tinfoil hat before coming in. But here we are and chia seeds are awesome — 6 grams of fiber, 3 grams of omega 3s and 3 grams of protein in one little tablespoon. They’re terrific in oatmeal, muffins, pancakes and now smoothies. They’re similar to flax seeds in that they get all gooey in liquid. So it’s to be expected that when you whirl them up in a smoothie it’s going to get thick and frosty fast. The longer it sits, the thicker it gets so chia smoothies are best enjoyed straight away. This is a total vacation in glass — I swear you’ll feel the salt water breeze through your hair with the first sip!

@Emma - It's fabulous! I'm not typically a tropical kinda girl and I LOVE it!

This looks fab! Nice and thick, just how I like it, and I love all those tropical flavours too 🙂

I made this one today, but I used orange juice instead of coconut milk because I had it handy. It was amazing! I made a double batch to share, but could have easily frozen the other half (if my "other half" hadn't wanted to drink it!)

This sounds like such a deliciously thick and tasty smoothy! I definitely need to get back on the smoothy train this summer, and this looks like a good place to start!
