These Coconut Peach Popsicles are not only incredibly easy to make but also bursting with flavor and natural goodness of summer. They are simple enough for kids to help with and the perfect dessert for warm summer nights.

- 1 ripe peach
- 1 (6-oz [170-g]) container vanilla coconut milk yogurt
- 1/4 cup (60 ml) water
- Fresh basil or mint, optional
Instructions
1. Cut the peach into quarters, and discard the pit.
2. Add all of the ingredients to a blender. Blend until smooth and pour into popsicle molds to freeze.
3. Freeze for 3 to 4 hours before serving.
