I really want to hug whoever invented the slow cooker. While it may sit in the back of my cabinet most of the year, it’s out in full force December through March. Okay, maybe April. My general rule is this: If it’s cold and snowy, the slow cooker is on at least three nights a week heating up delicious vegan meals for my significant other and I.
The past few years it's snowed well after St. Patrick's Day here in Chicago. With this in mind, we have several months of slow cooking action ahead of us. Don’t have a slow cooker? I can almost promise that if you’re between the ages of 20 and 25, you’re going to get one for the holidays. After all, receiving cookware and utensils for Christmas is kind of like a passage to adulthood. When it happens, be grateful. You have the hardware, now you just need some bomb vegan recipes to start cooking.
