Breakfast in a Jar: Overnight Muesli with Blueberries

Overnight Muesli this recipe

I’m always looking for a new and easy (vegan) breakfast, and there’s one thing I have to admit I have never tried: the overnight muesli soak. It just felt odd, like it was going to be all cold and mushy in the morning. Cold and mushy is not my thing. Warm and creamy is fine, but eh, I’ll leave it to the Swiss.

So you can imagine my surprise when I finally made it happen. Well, to be honest I didn’t make a thing happen. I was fortunate enough to be invited to a friend’s house for brunch and our hostess was wise in the ways of overnight muesli. It was cold, creamy, and totally delicious. I’ve been converted.

 

Overnight Muesli

Start with a basic muesli, I like Bob’s Red Mill, Familia, or plain rolled oats. Add your favorite mixins, a hefty portion of nondairy yogurt (about double the oat/muesli mixture), a squeeze of fresh orange juice, give it all a mix, and leave it. Perfect for setting up the night before for a grab-and-go, but also fine to prepare the morning of if you have an hour or more to let it sit. Ideal for a morning you’re headed to the gym before work or in our case, a morning surf.

Optional Mix Ins:

  • Fruit: blueberries, bananas, strawberries, raspberries, blackberries, dried cranberries, raisins
  • Extras: hemp seeds, flax seed meal, chia seeds, dried coconut
  • Nuts: sliced almonds, walnuts, sunflower seeds

Description

Optional add-ins:

  • Fruit: blueberries, bananas, strawberries, raspberries, blackberries, dried cranberries, raisins
  • Extras: hemp seeds, flax seed meal, chia seeds, dried coconut
  • Nuts: sliced almonds, walnuts, sunflower seeds

Ingredients

Scale

½ cup oats or muesli

1 cup non-dairy yogurt

¼ cup blueberries

1 orange, freshly squeezed


Instructions

Add oats (or muesli), yogurt, blueberries and orange juice to a mason jar. Let sit in the refrigerator overnight.


Notes

You can add a splash of non-dairy milk in the morning, if your overnight muesli has gotten too thick.

    This is so delicious! I used cherry yogurt and added cinnamon and coconut. Super easy breakfast on the go!

    This is my favorite breakfast! I love muesli. My Favorite is Evoke Muesli! Keeps me full and energized. It's more of a modern muesli- no added sugar, no preservatives, no oils, non GMO. Organic and Gluten Free! Has all the mix ins you mentioned and more in their different flavors.
    I mix mine with almond or coconut milk- yumm and ready to go in the morning!

    @Cara - I LOVE the coconut yogurt, but yes. WAY too much sugar. Trader Joe's has been out for weeks, a perfect opportunity to track down the greek coconut yogurt! Sometimes I buy the unsweetened coconut yogurt and mix it 50/50 with the regular stuff.

    You read my mind! I was just saying yesterday that I want to make muesli because yes, I am that lazy that I can't even get myself motivated to cook oatmeal AND we found the best vegan yogurt. Most vegan yogurt has too much sugar for my liking, but the So Delicious Greek-style coconut milk yogurt only has 7 grams of sugar in the plain, and aroiund 11 grams for the flavored varieties.
