I can’t count how many times I’ve heard the excuse, “I would be vegan but it’s too expensive.” I’d venture to say its one of the most common reasons people don’t try a plant-based diet. But here’s the real deal: Following a vegan meal plan can be expensive. But so can a paleo diet, and so can a gluten-free diet. Even a junk food diet can be pricey if you buy all of your snacks at Whole Foods.
The truth is, eating vegan doesn’t have to bust your budget. It’s entirely possible to buy healthy, wholesome foods and make delicious recipes without spending a fortune. How do we know this? At Well Vegan, we do a lot of cooking. Are we going to drop hundreds of dollars each week on groceries? Heck no! We’re going to shop sales, buy in bulk, eat seasonally and stock our pantries with budget-friendly staples we’ll use again and again.
Then, we pass the savings along to you in the form of affordable recipes. In particular, the five dishes below are a few of the most budget-friendly dishes we have.
Frozen Chocolate Banana Swirl
This recipe literally contains three ingredients. THREE! It doesn’t get much more budget-friendly than that. Plus, it’ll totally satisfy your every ice cream craving.
French Lentil Soup
Lentils are one of the cheapest pantry staples. Plus, they’re full of healthy fiber, which makes you feel full longer. We especially love them in this easy, delicious soup.
Tacos with Spinach, Mushroom, Potato and Caramelized Onions
This recipe is great if you’re feeding a crowd, as tortillas are super-cheap. Potatoes, spinach and onions are budget-friendly, too. Mmmmmm tacos.
Wacky Cake
A long time ago when butter and eggs were far too expensive, Americans found a way to make their cakes without dairy. Alas, the first vegan cake was accidentally born.
Quinoa Tempeh Bowl with Roasted Cauliflower
If you’re active on Pinterest or Instagram, you know “bowls” are all the rage. This one instantly becomes budget-friendly by swapping couscous for quinoa.
If you’re concerned about being able to stick to a grocery budget on a vegan meal plan, don’t be. There are a lot more budget-friendly vegan recipes to come – which brings me to a very special announcement...
Ready?
We’re writing a cookbook! It’s true. At Well Vegan, we’re already hard at work developing a book full of budget-friendly recipes that make eating vegan accessible for everyone. The only bad news is that you’ll have to wait until July 2017 to get your copy. Yes, this is the real thing!
We’re so excited for you to try the awesome bowls, salads, breakfasts and desserts we’ve created over the past few months. We’ll share more details (and maybe a few budget-friendly recipes) as we have them. Thanks for your support on this fun and delicious journey into affordable plant-based eating. Cheers!
