    Burrito Bowls

    I love this burrito bowl recipe, because it's so versatile! You can add whatever vegetable you have on hand: swap the lettuce for kale or spinach, substitute quinoa or farro for the rice. Make it your own and a regular recipe in your repertoire.

    Bonus points, it's gluten-free and soy-free!

    Description

    I love this burrito bowl recipe, because it's so versatile! You can add whatever vegetable you have on hand: swap the lettuce for kale or spinach, substitute quinoa or farro for the rice. Make it your own and a regular recipe in your repertoire.


    Ingredients

    Units Scale
    • 1 cup brown rice
    • 1 (15 oz.) can black or pinto beans
    • 1 avocado
    • 1 large zucchini
    • 2 medium carrots
    • 2 cups romaine lettuce, shredded
    • ½ cup salsa
    • 1 tbsp. olive oil

    Instructions

    1. Start cooking rice according to package directions.
    2. While rice is cooking, chop vegetables and prepare lettuce and avocado.
    3. When rice is almost done, heat olive oil in a medium sauté pan over medium heat. Add carrots and let cook for 2-3 minutes before adding zucchini. Sauté carrots and zucchini another 4-5 minutes until just tender, but not mushy.
    4. Meanwhile, warm beans in a small saucepan on the stove or microwave.
    5. Assemble all ingredients in a bowl: rice, beans, sautéed vegetables, avocado, lettuce and salsa. Serve.

      This recipe was a hit with my very picky 7 year old daughter. She even took it to school the next day for lunch. My husband, son, and I all thought it was a good start but needed a bit more flavor. My husband and son, who love spicy foods, added a ghost pepper salsa to theirs and I added a homemade taco seasoning to mine. This is another recipe I will definitely make again with some more spice.

        @Summer - Good call on the spicing it up! We usually add fresh salsa as well, but never thought to make my own taco seasoning 🙂
