I remember arriving at Matthew Kenney Culinary in Thailand like it was yesterday. After a full day of globetrotting, I finally made it to my suite at Evason Hua Hin – my home for the next four weeks. I slid open the balcony door and stepped onto my private terrace to watch the sun set over the lush vegetable and herb garden. The air was humid and warm. Exotic birds chirped twilight salutations. It was a welcome respite from the blistering cold Chicago winter I had left behind.
Oh yeah, I can get used to this.
And of course, this.
The next month was nothing short of magical. A challenging morning in the kitchen was always rewarded with an afternoon of relaxing at the pool, a Thai massage with a sea view, or exploring the local markets. I met friends I will treasure forever and made incredible memories I will never forget. When I left, I knew one day that I wanted to share this experience with other people – and I am so thrilled to say my dream is coming true.

In March 2018, I am VERY excited to return to Evason Hua Hin to co-lead a wellness retreat with Amie Rader. Aside from being one of my closest girlfriends, Amie is a Kansas City yoga instructor and all around spiritual inspiration. We planned every last detail of this retreat with our guests’ wellness journey in mind. Each morning will start with breakfast (vegan and non-vegan options available), followed by outdoor yoga and meditation in a peaceful, healing environment. If you’ve never done yoga before, no worries! Amie’s classes are perfect for all experience levels.
The afternoons are yours to relax at the pool, wander down the beach and discover local lunch spots, or soothe tension with a traditional Thai massage. In the evenings, we’ll head to the cooking classroom to whip up a nourishing vegan meal. Surprise! I’m your instructor. I’ll provide tips and tricks for preparing healthy plant-based meals at home, as well as a demo of each recipe before you grab your ingredients and head to your own workstations. Finally, we’ll sit down and enjoy dinner as a group before parting ways for the night. If there’s interest, we’ll plan outings to Sam Roi Yot National Park, a local vineyard with amazing wines, and the weekend night market. There’s so much to explore, it’s hard to choose what to do first!
