Ask anyone who knows me what my favorite food is and they’ll say “pizza” before you can even finish your sentence. I’ve discovered all of the best spots to get vegan pizza in town, and I’ve tried every plant-based pizza in my grocer’s freezer aisle. Yeah, I guess you could say I’m a little obsessed. But I was born and raised in Chicago – what do you expect?
As much as I enjoy patronizing my favorite pizza joints, I also really like making my own pies at home. I can get creative with my sauces and toppings, and even experiment with nut-based cheeses to bump up the ooey-gooey factor. Not to mention, cooking at home is typically a lot more affordable than ordering in. Speaking of which, did you know you can get vegan pizza dough for just a couple of bucks at Trader Joe’s? Thai Tofu Pizza

Ingredients
- 1 prepared pizza crust
- 1 cup peanut sauce (homemade or store-bought)
- 2 cups extra-firm tofu, diced and fried
- 4 green onions, slice diagonally
- ½ cup bean sprouts
- ¼ cup carrot, shredded
- ¼ cup roasted peanuts, chopped
- 2 Tbsp. fresh cilantro, chopped
Instructions
Preheat oven according to pizza crust directions. Place fried tofu in a small bowl and drizzle with ¼ cup peanut sauce. Toss to coat all of the pieces. Spread the remaining peanut sauce in a thin layer atop the pizza crust, followed by the tofu, green onion, bean sprouts and carrots. Top your pizza with the chopped peanuts and bake according to pizza crust directions. Once the crust is golden brown, remove your pizza from the oven and garnish with chopped cilantro. Allow pizza to cool for 5 minutes before slicing and serving.
