There’s something really great about a holiday that’s pretty much over by lunchtime. Wake up, hunt some (faux) eggs, have a nice brunch and everyone is home in time for an afternoon nap. Whether you’re in the position of hostess or guest this year, I put together some suggestions for a veganized Easter brunch that won’t disappoint.
You can simply make one of these and call it good, or go all in and make the whole shebang if you have the time and appetite (or guest list). Center stage is the spinach and mushroom quiche, but if you’re short on time try the very berry fruit salad. It’s an unlikely pairing of fresh berries and balsamic vinegar that’s absurdly easy to make, but adds a little something extra to what would otherwise be a very ordinary fruit salad. It’s sure to become part of your berry season repertoire! If you need something that’s great for making ahead of time, both the quiche and the scones are fine choices.
And even if you don’t partake in Easter celebrations, use these recipes to whip yourself (and maybe a few friends) up one darn nice brunch.

This is an awesome list. I missed my opportunity for Easter, but it will be nice for other holiday breakfasts, like Christmas and Pi-day (March 14th, Pi = 3.14.).
