Mother’s Day Recipes Kids (Or Adults) Can Totally Make

    May 5, 2014 · by Katie Koteen · Modified: Aug 22, 2022

Last week we hit up our local strawberry field for some u-pick fun. You would think that eliminating the labor would make these cheaper strawberries, but in fact this activity is subject to the “novelty tax” — when one pays more for something that is supposed to be fun and unique! So here we have the most expensive strawberries on Earth. They really are amazingly ripe and delicious, but must be used quickly as they were picked at the freaking PEAK of ripeness. So let’s get to it! Quick and simple, two of my favorite strawberry recipes, which are both perfect and simple if you’re looking for a totally doable Mother’s Day dessert your kids will have no trouble whipping up (pun entirely intended).

    Strawberry Recipes:

    Chocolate Covered Strawberries

    Whipped Cashew Cream and Strawberries,

or make this into Strawberry Shortcake by pairing it with some plain scones. Use this Scone Recipe, just leave out the currants and make them all cute and round.

    And a few brunch ideas:

    Blueberry Quinoa Muffins

    Breakfast Fruit Crunch

    French Toast

    Perfect Cinnamon Buns

    Spinach and Mushroom Quiche

    Chickpea and Vegetable Quiche

    Greens Quiche

    Hashed Browns

    Currant Scones

    Endive and Apple Salad

Green Bean and Fingerling Potato Salad with Miso Dressing

    Wheat Berry and Arugula Salad

    Carrot Salad

Massaged Kale Salad with Grapes and Poppy Seed Dressing

    Very Berry Fruit Salad

Strawberry fields forever. I was impressed by how well the vegan whipped cream works out. I was skeptical, but turned out really good.

@John - It's eat-it-with-a-spoon GOOD! Something about the slight coconut flavor makes it especially impressive.

I can't wait to make vegan whipped cream. I've been hoping for a substitute.
