This vegan BLTA sandwich (bacon, lettuce, tomato, avocado) is a super simple sandwich that you can make in minutes, with a little muti-tasking. Just start your favorite fakin' bacon cooking, pop your bread in the toaster and prep your veggies while everything a-cookin'! Lunch in minutes. I used the Benevolent Bacon for this one. Aside from having a pretty fantastic name, it was super flavorful and easy to cook. I also like the simple tempeh strips as an alternative.

- 8 strips tempeh bacon
- 4 leaves lettuce
- 1 large tomato
- ½ large avocado
- 2 tbsp. vegan mayonnaise
- 4 slices whole wheat bread
Instructions
- Cook tempeh bacon according to package directions.
- Meanwhile, toast bread and slice tomatoes and avocado.
- Assemble and enjoy!
