I’m back on my game. Healthy breakfast, a (short) workout, kids off to school. Perfection. 

A healthy breakfast can be a struggle, especially as I try to keep my mornings gluten-free. I can’t eat cardboard in a bowl, so the flavor is paramount to the happiness level of the rest of my day. And what better flavor than nutty horchata oatmeal — reminiscent of warm summer afternoons but all the cinnamon goodness in a warm and cozy bowl?

This recipe uses dates to add a little sweetness, but if you have a hankering for something even sweeter try a little maple syrup on top.

If you're short on time in the mornings, throw all of the ingredients in a small pot. Bring to a quick boil, turn off the heat and leave the lid on. Come back after you've showered and your oatmeal will be superb.

Description

Nutty Horchata Oatmeal — reminiscent of warm summer afternoons but all the nutty, cinnamon goodness in a warm and cozy bowl. Gluten-free and soy-free.


Ingredients

Units Scale
  • 1 cup old fashioned oats
  • 2 cups almond milk
  • 2 dates, diced
  • ¼ tsp. cinnamon
  • 2 tbsp. sliced almonds

Instructions

  1. Combine all ingredients in a small sauce pan over medium heat. Bring to a gentle boil and reduce heat to a simmer. Cover and cook another 5–8 minutes.
