healthy breakfast can be a struggle, especially as I try to keep my mornings gluten-free. I can’t eat cardboard in a bowl, so the flavor is paramount to the happiness level of the rest of my day. And what better flavor than nutty horchata oatmeal — reminiscent of warm summer afternoons but all the cinnamon goodness in a warm and cozy bowl?
This recipe uses dates to add a little sweetness, but if you have a hankering for something even sweeter try a little maple syrup on top.
If you're short on time in the mornings, throw all of the ingredients in a small pot. Bring to a quick boil, turn off the heat and leave the lid on. Come back after you've showered and your oatmeal will be superb.
