8 Healthy Vegan Popsicles for Summer

Usually, seeing a stranger in a truck driving slowly down your street tempting children with sugary sweets is cause for serious alarm. But during summer, it’s totally acceptable. In fact, people get really excited about it. Of course, I’m talking about the ice cream man.

While your neighborhood ice cream man doesn’t likely pose an actual threat, what’s lurking inside the frozen treats he’s selling does. For example, the Red, White and Blue Turbo Rocket – you know the one – is loaded with nasty fillers, preservatives and colors. And that Spongebob Squarepants Bar kids love so much? Yes, the one with the eyeballs. One serving contains 16 grams of sugar.

Beyond the scary list of ingredients and jaw-dropping amount of sugar in each treat, most items in your ice cream man’s freezer contain milk, whey and cream – which are definitely not part of a vegan meal plan. Though the nostalgia induced by the ice cream truck’s music might send you running for the street like one of Pavlov’s dogs, you and your family are much better off making your own vegan popsicles at home.

Here are a few of our favorite vegan popsicle recipes that are easy to make and just as delicious as the real deal – only a million times healthier.

Creamy Coconut and Mixed Berry Popsicles

  • 1-15 oz can full-fat coconut milk
  • 1 tsp. pure vanilla bean paste or extract
  • ¼ cup pure honey, divided (use agave to make it vegan)
  • ¾ cup blackberries
  • ¾ cup raspberries

Avocado Lime Popsicles

  • 1 avocado
  • 1 cup coconut cream
  • ¼ cup maple syrup
  • 1 banana
  • ¼ cup lime juice
  • 1 lime, zested

Lava Flow Popsicles

For the pineapple swirl:

  • 1½ cups pineapple
  • 1 cup mangos
  • ½ cup - ¾ cup coconut milk

For the strawberry swirl:

  • 2 cups strawberries
  • 3-4 Tbsp. orange juice
  • 1 Tbsp. honey (omit or use agave to make it vegan)

    I know social things can be a bummer when you’re trying to read something. Sorry about that, but it’s how we keep the lights on! You should consider using an ad blocker. All of the social and ads have opt-out options. For the social, you just hover above the bar and a few blue arrows appear at the bottom. Just click those and they’re gone. Simple as that.
