    5 Delicious Vegan Fourth of July Recipes

    It’s officially summer. I don’t know about you, but I couldn’t be happier. The sun is shining, my garden is overflowing with fresh fruits and veggies, and I seem to weasel my way into a barbecue on a weekly basis. Yeah, life is pretty good.

    In my experience, I’ve found that starting (and sticking to) a vegan meal plan is easiest during the summer. All I want to do is snack on watermelon and eat a giant salad for every meal. The days are hot and long, and eating a bunch of produce helps me stay happy, healthy, and hydrated.

    Are you with me? Good. Because I just found a handful of nutritious and delicious vegan Fourth of July recipes I couldn’t wait to share with you. Here we go!

    Grilled Chipotle Lime Cauliflower Steaks

    If you haven’t tried cauliflower steaks, this Fourth of July is a great time to hop on the bandwagon. We love this recipe from The Kitchn because they’re made to be smoky and spicy. Plus, we can’t resist the explosive flavor combination of cilantro and lime. This dish works especially well as a main course. Even your omnivorous friends will want to sneak a bite.

    Red Quinoa Salad with Corn, Avocado and Black Beans

    All of the ingredients in this simple salad are in season, making it an ideal side for your Fourth of July barbecue. If you’re feeling ambitious, you can use fresh corn instead of frozen. Brush each cob with coconut oil, sprinkle with salt and pepper, and throw it on the grill for 15-20 minutes before adding it to the mix.
