It’s officially summer. I don’t know about you, but I couldn’t be happier. The sun is shining, my garden is overflowing with fresh fruits and veggies, and I seem to weasel my way into a barbecue on a weekly basis. Yeah, life is pretty good.
In my experience, I’ve found that starting (and sticking to) a vegan meal plan is easiest during the summer. All I want to do is snack on watermelon and eat a giant salad for every meal. The days are hot and long, and eating a bunch of produce helps me stay happy, healthy, and hydrated.
