Memorial Day weekend is upon us, which means it’s finally time to dust off our grills and drag them out of their winter resting places. Though the seasons don’t technically change for a few more weeks, Memorial Day marks the unofficial kickoff to summer. I don’t know about you, but I can’t wait to fire up the grill and slather everything in my refrigerator with barbecue sauce. Okay, maybe that’s a bit extreme. But honestly, the idea of being able to cook (and eat) outdoors again is already making my taste buds dance.
Since we at Well Vegan have barbecue on the brain and an insatiable craving for the freshest flavors of the season, we thought we’d share a few of our favorite vegan Memorial Day recipes. From corn on the cob, to macaroni salad, to peaches on the grill, these tasty, plant-based dishes align perfectly with a vegan meal plan. What’s more, they’re so versatile you can enjoy them all summer long. You won’t even miss the meat. We promise.
Black Bean Burgers
These black bean burgers are so easy to make you’ll never buy a box of frozen patties again. We like them served with avocado or guacamole, but if you’re feeling frisky a grilled pineapple ring would also make a lovely topping.
Macaroni Salad
Here’s another super simple vegan Memorial Day recipe that might be better than the original. This rich and creamy macaroni salad features crisp cucumbers and fresh dill. It’s so refreshing on a hot summer day!
Grilled Corn with Citrus “Butter”
Growing up in the Midwest, corn on the cob was ever-present at family barbecues. We took a vegan approach to this summer staple by serving it with citrus “butter” straight off the grill. Yum.
French Potato Salad
This vegan potato salad boasts loads of fresh herbs. Be sure to keep a close eye on the potatoes as they’re cooking. If not, you’ll have a big pot of mashed potatoes, which probably wouldn’t be too bad either.
Agave Lime Grilled Tofu with Asian Slaw and Mashed Sweet Potatoes
If you recently switched to a vegan meal plan and haven’t tried grilled tofu – you’re in for a treat. This dish packs a lot of flavor! Be sure to allow extra time for the tofu to marinate.
Grilled Vanilla Peaches
Don’t forget to save room for dessert! These grilled vanilla peaches are absolutely divine. Top with a dollop of non-dairy ice cream for a cool and refreshing treat.
