When I was growing up, eating leftovers was just as much of a tradition as Thanksgiving itself. At least the way I remember it. It was turkey noodle soup for breakfast, lunch, and dinner for at least the next five days. I may be exaggerating on the breakfast bit, but soup was definitely served at least twice daily until we ran out.
Now that my days of eating traditional Thanksgiving foods are over, I get sent home with a lot of plant-based appetizers, side dishes, and desserts. This is when being the only vegan in my family comes in really handy. No longer am I subject to endless bowls of turkey noodle soup! I get to be creative in the kitchen and come up unique ways to use leftover potatoes, pies, and veggies to make delicious dishes with a seasonal flair.
