I’m a huge fan of comfort foods (hello, pasta). But for me, summer is all about cool, refreshing recipes that don’t require me to turn on the oven or fire up the stove. I’m especially into popsicles right now. Ever since I bought a popsicle mold to make treats for the Frugal Vegan cookbook launch party, I’ve been dreaming up fruity concoctions to turn into frozen vegan treats. So far, I’ve made a batch with blueberries, coconut milk, fresh mint leaves, and a squeeze of lime. It’s such a refreshing combination!

While heading to the grocery store and picking up a tub of vegan ice cream is always an option (I’m a total sucker for the dairy-free Ben & Jerry’s flavors – like, all of them), it’s pretty simple to whip up your own summer desserts at home. The only hard part is waiting for them to freeze. If you can exercise some patience, I think you’ll find that the following recipes will satisfy all of your cravings for the creamy, cool, straight-from-the-ice-cream-truck flavor you need on a hot summer day.

Coconut Peach Popsicles

Ingredients

  • 1 ripe peach
  • 1 (6-oz [170-g]) container vanilla coconut milk yogurt
  • 1⁄4 cup (60 ml) water
  • Fresh basil or mint, optional

Instructions

1. Cut the peach into quarters, and discard the pit.
2. Add all of the ingredients to a blender. Blend until smooth and pour into popsicle molds to freeze.
3. Freeze for 3 to 4 hours before serving.

  • Perhaps you saw this blushing beet hummus in our vegan charcuterie post earlier this week. It adds a pop of color to any Valentine's Day spread! It's so delicious slathered on a baguette or crackers. Here's the how-to:⠀

Roasted Beet Hummus⠀
⠀
½ pounds beets, trimmed⠀
1/3 cup tahini⠀
2 Tbsp. lemon juice⠀
1 garlic clove, minced⠀
¾ tsp. salt⠀
2-3 Tbsp. non-dairy milk (as needed)⠀
Fresh dill, chopped (optional)⠀
⠀
Instructions:⠀
⠀
1. Preheat oven to 350F. Wrap beets in aluminum foil, place them on a baking sheet, and roast for an hour, or until tender.⠀
⠀
2. Once the beets have cooled, peel and quarter them. Add the peeled beets, tahini, lemon juice, garlic and salt to a food processor. Blend until smooth, adding the non-dairy milk 1 tablespoon at a time as necessary.⠀ 3. Scoop hummus into a serving bowl and garnish with fresh dill, if using.⠀
