Thanksgiving is less than two weeks away. And I am so ready.
I thought that maybe my favorite holiday would lose a bit of its luster after deciding to switch to a vegan meal plan, but oh how wrong I was. I love Thanksgiving now more than ever. You know why? I really get a kick out of experimenting with new recipes and putting a seasonal twist on my old favorites. Thanksgiving is the perfect excuse to get a little crazy in the kitchen and cook way more food than my family and friends could possibly be expected to eat.
Now, it’s your turn. On behalf of Well Vegan, I’m excited to dish up eight of our favorite vegan holiday recipes you can share with your loved ones. I hope this post is one you can reference again and again over the next couple of months as you explore a new (vegan) way to celebrate the flavors of the season.
Country “Meatloaf” with Gravy
This is a wonderful recipe for feeding a crowd during the holidays. It’s hearty and savory enough to satisfy meat eaters and healthy enough to get us through the holidays without putting on a few extra pounds.
Tempeh Shepherd’s Pie
A plant-based take on a winter classic, this vegan holiday recipe is a crowd pleaser. The tempeh adds a kick of protein that will fill you up and keep you satisfied.
Mashed Potatoes
These vegan mashed potatoes are just as tasty (if not better) than the original. Swap out butter with Earth Balance, add some cashew cream and – tada! You’ve got the perfect holiday side dish.
Mushroom Gravy
What good are vegan mashed potatoes without some savory gravy to pour on top? This homemade mushroom gravy recipe will impress fellow vegans and carnivores alike.
Pumpkin Pie
This is the perfect pumpkin pie recipe, made vegan with the help of a little silken tofu. No one will ever tell the difference! If you want to make your own crust, use our recipe for Perfect Flaky Pie Crust or our amazing Toasted Pecan Crust.
Carrots with Shallots, Sage, and Thyme
This is a great vegan holiday recipe for when you’re expecting a full house. The recipe serves eight, but don’t hesitate to halve the quantities and enjoy it any night of the week.
Roasted Brussels Sprouts
Brussels sprouts tend to get a bad rap. If you haven’t given them a chance since you switched to a vegan meal plan, this is your golden opportunity! Better yet, you only need a handful of ingredients to prepare this tasty side dish.
Green Beans with Lemon and Thyme
When you add this recipe to your holiday menu, you won’t even miss the dairy-heavy green bean casseroles of Thanksgivings past. The addition of lemon adds a delightful, citrusy twist.
John
I have had mushroom gravy and it is really great. Shepherd's pie is also a good dish. I'll have to try it with Tempeh.
