I don’t know about you, but when I’m browsing for new recipes I get super turned off when I see a long list of ingredients. Sure, that sundried tomato vegan pesto over roasted potatoes would probably be freakin’ amazing if I gave it a shot. But I really have to be in the right mood for a lot of chopping, measuring, mixing, and sautéing. Not to mention, more ingredients means more money spent at the grocery store. That’s not usually my goal when I’m stocking my fridge and pantry for the week.
Luckily, there are a lot of tasty recipes out there that align with your vegan meal plan yet don’t involve a laundry list of ingredients. However, finding these super simple recipes can be a bit of a struggle. That’s why we looked through our archives and scanned the Internet in search of a few we could share with you. The following vegan recipes with 5 ingredients or less are cheap and easy to make, yet don’t skimp on flavor.
By the way – olive oil, salt and pepper are freebies. Because you should always have these staples in stock, they aren’t included in the ingredient count for the recipes below.
Strawberry Banana Tofu Smoothie by Well Vegan
½ box silken tofu (soft or firm)
1 cup sliced strawberries
2 medium bananas
1 cup soy milk
1 teaspoon maple syrup
Grape Tomato and Avocado Salad by Whole Foods Market
1 pint grape tomatoes, halved
½ cup chopped flat-leaf parsley or cilantro, or mixture of both
1 tablespoon extra-virgin olive oil
1 tablespoon lemon juice
¼ white onion, chopped
2 avocados, chopped
¼ teaspoon high quality sea salt, such as Fleur de Sal
Haricots Verts, Roasted Fennel and Shallots by Well Vegan
Nonstick vegetable oil spray
2 large fresh fennel bulbs, trimmed
¾ lbs. shallots, peeled, halved through root end
5 tablespoons olive oil, divided
1 lb. haricots verts or small slender green beans, trimmed

10-12 medium tomatoes
2 tablespoons nutritional yeast
1 tablespoon dried oregano
