- Peanut Butter Oatmeal Cookies
These are the best vegan cookies ever made in the history of vegan cookies. Make these! Double your batch! They will be eaten.
- Spinach and Mushroom Quiche
Who says you need eggs to make a fantastic quiche? Serve yourself a slice (or two) for a hearty breakfast.
- Macaroni Salad
Prepare this dish the night before to give the flavors and “mayo” plenty of time to come together. This can easily be made with a gluten-free pasta.
- Almond Quinoa Muffins
These are great muffins – not too sweet and packed with protein. Make your own almond flour by blending up some almonds in a coffee grinder or food processor.
- Grilled Portobello Mushroom Sandwiches with Basil Aioli
Skip the freezer burned vegan patties and enjoy these hearty, flavorful Portobello burgers at your next barbecue or in the comfort of your kitchen.
- Vegan Meatballs
These homemade meatballs pack a whopping 25 grams of protein per serving! Pair with some whole-wheat pasta and marinara from scratch.
- Warm and Nutty Cinnamon Quinoa
Quinoa is an awesome breakfast alternative when you’re just plain sick of oatmeal. The cinnamon and blackberries are a divine flavor combination.
- Red Quinoa Salad with Corn, Avocados and Black Beans
This is a simple salad that’s great for a lunch or a light dinner. We like the grape tomatoes in this one, but feel free to use whatever you have on hand.
- Chocolate Covered Strawberries
These delectable but oh-so-simple Valentine’s Day treats are sure to impress the one you love. Or, make them for yourself!
- Tomato Bisque
There’s nothing better than a hot bowl of tomato soup to get you through winter. This one is creamy and filling and pairs perfectly with a slice of crusty bread.

@Paula - Thanks so much! One of my bucket list items is to visit Rancho La Puerta. The ALL of the food there is supposed to be amazing!!!
Paula Hess
I have made the Rancho La Puerta granola so many times and I love it so much. Cardamom and orange zest make it amazing.
I just made the Almond Quinoa Muffins yesterday and put some bittersweet chocolate chips in half of them to get my finicky eater to try. I was worried they would be so quinoa-y but they are not at all! Glad you posted a photo of what they are supposed to look like; they came out very flat and dense but that must be how they are supposed to be.
I can't wait to make the Tomato Bisque. Thanks for all you do!
John
Awesome collection. Thanks for putting it together. Those are some quality choices.
